Vegan Survival on the Island
I am back again to the island in the eastern part of Indonesia since last year during the outbreak. It was such a challenging situation to travel outside of the regions. I decided to keep going and continuing what I have been started before.
I really want to live my life to the fullest while embracing all the moments altogether. My previous post was about the challenge during my time on the island. Today I want to share what I eat with the limited local produce. It’s always feel so great and content when I could make something really I love with all the limitations I have.
Here is the recipe I would love to share about what I eat as an imperfect vegan on the island.
- Mashed sweet potato: peel 1 sweet potato, wash it, steam it for 20–25 mins. Put in a bowl and mash it until smooth. You may add a pinch of salt and pepper. (optional) and I did not using any seasonings because I love the natural flavor of sweet potato.
- Veggies: Peel 1 carrot, cut and wash it, steam it for 10 mins along with the green beans.
- Tempeh and Tofu: cut them into slices and fry with coconut oil. I usually marinate them first with salt, pepper, and crushed garlic.
- Serve them all while still hot. And enjoy with cup of tea or maybe fresh juice.
So, even though we live on the remote island, we could still enjoy a proper meal and pamper ourselves with things we love. Enjoy the nutritious and healthy foods with your loved ones!!
